Porchetta Pork Chops
An unctuous stuffed chop of local pork redolent with garlic, rosemary and fennel. Suggested sides: Smashed Celeriac, Classic Caesar and/or Creamy Pesto Beans.

Cooking Instructions:
Pull chops out of fridge 1/2 hour before cooking
Put a cast iron skillet or baking sheet in the oven and preheat to 350 degrees
Once oven is preheated, place chops in skillet or on sheet with oil so they are not touching.
Cook for 10-12 minutes or until meat has reached 135 degrees
Tent with foil and let rest for 10 mins before serving
Ingredients: local pork chops, organic lemon, organic garlic, organic rosemary, red pepper flakes, fennel seeds, chopped fennel fronds, organic EVOO, salt and pepper.
