Citrus Fennel Salad with Limed Shrimp
Fennel bulb is shaved over arugula and topped with mandarin orange and ruby red grapefruit. Argentinean shrimp are marinated in lime juice and tossed with Castelvetrano olives and toasted pine nuts. All is brought together with a shallot mustard vinaigrette.
